Prickly Pear Salsa
There is probably little to nothing more rewarding for a cook than preparing a stunning dish with foraged foods! One such food is the fruit from the Prickly Pear Cactus plant that is plentiful in the American South West, and Texas. The fruit itself is a beautiful shade of deep reddish-purple, and the taste is sweet, juicy and very full. It naturally pairs quite well with other veggies of the same geographical region to create a mouth-watering salsa!
Begin with a very classic Salsa Recipe:
2 Large tomatoes 1 Jalapeno Juice from 1 Large Lime 1 White Onion 2 TBSP Cilantro
Chop all ingredients and mix well in a medium bowl. Set in refrigerator and allow flavors to combine for one hour. Remove from the refrigerator and add 1 C of diced Prickly Pear flesh. Preparing the fruit can be a little tricky as the skin does contain very small cactus spines. Use gloves during preparation, or scrape off spines with a very sharp knife. Next, cut the fruit in half and remove seeds. You will be left with a very thin layer of fruit and the skin. Separate these, and dice the flesh. Add salt, and pepper to the prepared Prickly Pear fruit and stir. Then add this mixture to your prepared salsa! Serve Immediately with Chips, tortillas, or as a sauce for your favorite dish! Serves 4-6
